Slow Food

Sunday food. Should be slow. Sunday silky sexy aubergines.  With some of the smoked organic garlic picked up at the farm where Saturday’s wedding took place.

Try it. It takes ages, but oh my word  it’s worth it.

Ingredients  Griddled aubergines, tin of tomatoes, clove garlic, small chunk of ginger, chilli, onion chopped in chunks.

Fresh ground spices:  tablespoon peppercorns, teaspoon turmeric, cardamon pods (seed from four)  & coriander seed.

Can coconut milk, stock cube & tomatoes.

Fry off the onions, garlic and ginger. Add spices and the griddled aubergines. Add tomatoes, coconut milk and mug of stock.  Simmer for 45 minutes. Remove all the chunky stuff from the pan with a slotted spoon. Wizz the liquid in a blender and return to the pan. Fast  boil the liquid for five minutes to reduce and thicken.  Add all ingredients back to the pan, stir and serve.

Do it, do it, do it.  Seriously good grub.  And after the four weddings this week lovely to just kick back and eat great grub, whilst wearing yoga pants.
